Candied Yams

2 pounds Yams

3 cups Water

1.5 cup Brown Sugar- Packed

1 teaspoon AllSpice

1 teaspoon nutmeg

1/2 teaspoon cinnamon

Mini Marshmellows

4 tablespoons water for slurry

3 tablespoons cornstarch


Peel yams and cut in half length wise.  Cut each half of yam in one inch pieces.  Place yams in three quart sauce pan and add the three cups of water.  Add spices and brown sugar.  Cook until tender, yet still firm.  Transfer yams into an eight inch baking pan.  Return sauce to burner and bring to a light boil.  Take corn starch and four tablespoons of water, and blend together in a small bowl.  Whisk in cornstarch to thicken sauce.  Pour sauce over yams.  Top with marshmellows and place in a 350 degree oven until marshmellows begin to brown.
