Apple Glazed Pork Chop

4 thick cut pork chops
1 medium apple
6 cups sweetened apple juice
½ cup apple cider vinegar
1/4 teaspoon cinnamon
1/8 teaspoon nutmeg
1 tablespoon butter
1 teaspoon oil
4 mint sprigs


To start the apple glaze you will need a medium sauce pan. Combine the apple juice, vinegar, cinnamon and nutmeg. Bring to a boil. Reduce heat and simmer to a half cup of apple reduction remains. Remove from heat and set a side.
Core and cut apple in half. Thinly slice the apple 1/8th of an inch thick. In a medium non stick skillet melt the butter on low heat. Add apple slices and cook on a medium-low heat for three to four minutes turn over and cook just until tender. Remove from heat and set a side.
Cook pork chop over medium heat in a large skillet. When 3/4 done, baste chops with apple glaze. Cook chops to 155 degrees. When chops are ready place apple slices on top of chop and poor glaze over them. Garnish with mint and serve.
