Baking during the holidays, whether for your own family or for friends and neighbors is a tradition, but spending hours in the kitchen isn’t possible for everyone. There are many great mixes you can whip up in minutes, or just use a mix for part of the treat. I have a recipe for Peppermint Candy Cane Brownies. This is a recipe that can be made all from scratch or using mixes and pre-made frosting. I’ll show you the shortcut version that will look beautiful and taste delicious. First start with a brownie mix and bake according to package directions. Next you can either make a basic frosting and add peppermint extract and pink food coloring-- Or the shortcut uses a basic white frosting in a can- then add about a teaspoon and a half of peppermint extract and pink food coloring until it looks right. Spread the frosting over the brownies and let it chill. The third step is a delicious chocolate glaze. You just combine about a cup of semi-sweet chocolate chips with 6 tablespoons real butter and melt slowly together in the microwave for 30 seconds at a time until it’s smooth. Quickly spread the chocolate over the frosting and then top with crushed candy canes. Put it back in the fridge to let the chocolate set.
